What style is our Pizza?

There have been questions about which pizza we are emulating for the Singapore audience. With a single glance, with its square shape and crispier crust, it is obvious we are quite different. Because of its shape, some customers have guessed that it’s a Sicilian Pizza or the Roman al Taglio style.

Wrong.

Chef Fernando has created a signature hybrid dough, where traditional Neapolitan softness meets the satisfying heartiness of a ‘La Nonna’ bake. Our slow fermentation (nearly 72 hours) process creates an exceptionally flavorful crust that offers a satisfying, substantial chew. It’s the perfect canvas for our gourmet toppings, holding every ingredient beautifully while delivering a flavor punch with every bite.

The ‘La Nonna’ bake has the pizza dough spread into the olive oil greased square pan (we use the famous Lloyd’s pans) but with MINAMAL proofing (we do not let the dough rest/ rise), resulting in a much thinner, denser (more chew!) and slightly crispier crust when compared to other Neopolitan pizzas in Singapore today.

Chef Fernando decided on this dough for 3 key reasons:

    Chef Fernando has more than 30 years of experience making Neapolitan pizzas, and wanted to leverage on this hard-earned expertise and knowledge.

Final Words

So now you know. There are many, many styles of pizzas to be devoured and Singapore is blessed to have many of them in our little Red Dot. If you want that traditional Neopolitan pizza or the thin New York crust, there are quite a few great pizzerias that make a mean rendition of those styles.
